Cucumber And Avocado Gazpacho

Serves 2-4

1 avocado - pitted and roughly chopped
1 cucumber - small, seedless, peeled and roughly chopped
2 cups Bon Sip Turmeric Vegan Mushroom Broth or Roasted Chicken Sipping Bone Broth
1 shallot - finely chopped
1 Tbsp lemon juice freshly squeezed
½ tsp sea salt
¼ tsp black pepper - freshly ground

Place all above ingredients in a high-powered blender or food processor. Blend
until smooth. Adjust seasoning to taste. Pour into glass container and chill in
fridge 1-4 hours to your liking.
Garnish with fresh dill, freshly diced tomato, onion and/or red pepper flakes or
spicy oil.
