Chilled Minted Pea Bone Broth Soup

3 tbsp butter
1 yellow onion, chopped
1 jar Bon Sip Chicken FODMAP Bone Broth
4 cups shelled peas, frozen or fresh handful
each of fresh parsley and mint leaves
sour cream or crème fraiche for garnish
salt and pepper to taste

Add butter to saucepan and melt over medium heat. Add onion and stir until translucent. Pour in ½ jar of Bon Sip Chicken FODMAP Bone Broth and bring to a simmer - do not bring to a rolling boil. Add the peas and simmer for 3 minutes. Remove from heat and add parsley, mint and remaining ½ jar Bon Sip Chicken FODMAP Bone Broth to saucepan. Stir to combine. Transfer mixture to food processor or vitamix and puree until smooth to your liking. Season with salt and pepper. Refrigerate until cold to taste.
Serve in bowls and top with sour cream or crème fraiche for garnish.
